PANCAKE RECIPE:
Chez Ma Tante Style Fried Pancakes
Recipe:
2 large eggs and 2 yolks
1/4 cup or 56 grams granulated sugar
3 tablespoons kosher salt
2 lemons, zested
1/4 cup or 50 grams baking powder
1.5 cups or 355 grams whole milk
2 cups or 255 grams all-purpose flour
4 tablespoons or 62.5 grams ghee butter, melted, plus 2 ¼ cups|532 ml for cooking
Process:
Lightly cream eggs/yolks, sugar, salt, and lemon zest.
Add baking powder to the mixture and thoroughly mix in the baking powder until it is well combined.
Now add milk and combine. Now add 1/4 of the flour and combine gently with a whisk. You can now add the rest of the flour and combine until just mixed. *Very important not to overmix the batter* it is ok to have lumps.
Lastly, add the melted and lightly cooled ghee to the batter and mix until just combined.
In a cast iron skillet heat a generous amount of ghee and fry the pancakes. Be very careful flipping the pancakes since there is quite a bit of ghee (see video below).
Serve with jams, maple syrup, sour cream, whipped cream, or Crème Fraîche etc.
